Vanilla custard

Preparation time : 5 minutes, cooking time : 10 minutes

Ingredients:

  • 1 liter of milk
  • 8 egg yolks
  • 200 g sugar
  • 1 vanilla pod

Whisk together the egg yolks with the sugar until the mixture whitens. Open the vanilla pod in half and scrape the seeds, add these seeds to the cold milk. Bring the milk to a boil, pour over the eggs, whisk. Pour this mixture in another saucepan, cook over low heat about 10 minutes, stirring regularly (note the temperature of the custard should not exceed 85 ° C). The custard is cooked when it coatsa a wooden spatula.

My test: The temperature limit and cooking time are very important, if it’s too hot or too cooked the cream precipitates. It must be liquid enough yet, we must not let cook until it thickens too much, otherwise it will precipitate.
