Salmon tartare

This recipe makes for 20 servings.

Ingredients:

  • 1 pound skinless fresh salmon fillet
  • 12 pound smoked salmon, thickly sliced
  • 13 cup freshly squeezed lime juice (3 limes)
  • 13 cup minced shallots (2 shallots)
  • 2 tbsp good olive oil
  • 14 cup minced fresh dill (I couldn’t find dill, so I used chives)
  • 2 tbsp Dijon mustard
  • 2 tsp salt
  • 1 tsp coarsely ground black pepper

Mix all the ingredients grossly, it shouldn’t be a paste, cover with a plastic wrap and refrigerate for a few hours for the salmon to marinate.

My test: The recipe was awesome, everybody loved the tartare, I served it with toast and topped with sprouted seeds.
