Salmon tartare

This recipe makes for 20 servings. Ingredients: 1 pound skinless fresh salmon fillet 1⁄2 pound smoked salmon, thickly sliced 1⁄3 cup freshly squeezed lime juice (3 limes) 1⁄3 cup minced shallots (2 shallots) 2 tbsp good olive oil 1⁄4 cup minced fresh dill (I couldn’t find dill, so I used chives) 2 tbsp Dijon mustard 2 tsp salt 1 tsp coarsely ground black pepper Mix all the ingredients grossly, it shouldn’t be a paste, cover with a plastic wrap and refrigerate for a few hours for the salmon to marinate.…

Home made chips

This is a very simple recipe for home made chips, it may require some cooking utensils, unless you can find a way to replace the ones I used : a microwave support and a kitchen mandolin(see photo). Peel a couple of potatoes and sweet potatoes(you can also try with beets, celery and other root vegetables), cut them with the mandolin and put them in a bowl, add some olive oil, salt pepper and spices (i’ve tried cayenne pepper and paprika).…

Crabcakes

This recipe makes about 25 crabcakes. Ingredients: 1⁄2 cup mayonnaise (I made the mayonnaise myself, see Sauces) 1 large egg, beaten 1 tbsp Dijon mustard 1 tbsp Worchestershire sauce 1⁄2 teaspoon hot sauce 1 pound crab meat 20 saltine crackers, crushed 1⁄4 cup canola oil lemon wedges, for serving In a small bowl, whisk the mayonnaise with the egg, mustard, Worcestershire sauce and hot sauce until smooth.
